Blondie cocoa nibs cookies

Made 8 cookies I think
A little bit less than 3/4 cup coconut flour (sifted)
1/2 cup mashed banana (one small banana)
1/4 cup peanut butter
1/4 maple syrup or honey
1/2 tsp vanilla
2 Tbsp chocolate chips (I used cocoa nibs which are a lot healthier with less sugar, and so delicious! But I am sure normal choccy would be fine too)

Method:
1. In a large bowl, mash banana, add peanut butter, honey and vanilla. Combine until creamy
2. Add coconut flour, mix well. and finally add cocoa nibs or chocolate chips and stir around until even
3. Spread onto whatever, a pan, a plate or something else and put in the fridge. Once cooled you can cut in whatever shape you want and serve or put in an airtight container in the fridge or freezer for later use
